Not Eggbert, Tofu…
Running low on words, I feel somewhat “naughty” posting this without a bit more substance.
Or at least some sort of unnecessary tale!
However, after a sneaky photo appearing in ‘The Vegan‘ over three months ago, I have made numerous citations about this recipe. I have received many requests for it and since having enjoyed the meal myself several times this week, I don’t feel it’s right for me to keep it to myself any longer…
Missing the deadline…
OK, truth be told, my promise of a new recipe within the week really didn’t live up to much, but I do have some good excuses this time.
Although this post has taken longer than I had originally promised, I have got a truly hearty variation of cottage pie that I’d like to share with you which is bound to warm your cotton socks even during this sad excuse for a British summer that we are currently experiencing…
Absence makes the heart grow fonder…
It’s always sad to see a restaurant close, but if anyone decided to read a review of this restaurant now, they could be forgiven for thinking that it was not a sorry goodbye. However, I for one, loved this eatery! It was the first vegetarian restaurant I ever visited and it definitely evokes fond memories. The warm and friendly ambience, along with the trendy and unique ‘American-diner’ décor – Eat & Two Veg was a true gem in the heart of London and just a walk away from Regents Park.
If at first you don’t succeed…
When it comes to working with herbs and spices, I appreciate the varied and wonderful flavours but I am not one of those people who can produce a meal off the top of my head, confident that it will create a palatable result.
Saying that, I do love a challenge but it tends to take me longer to produce something I feel happy about sharing with others…
